Ingredients

  • 282 g whole rolled oats (approximately 2.5 cups; must be whole/integral oats)
  • 65 g desiccated coconut (coarse, unsweetened) (1 cup; must be coarse-cut and unsweetened)
  • 63 g seedless raisins (half cup; use seedless variety)
  • 73 g dates (approximately 7 dates; roughly chopped; added together with raisins)
  • 63 g roasted peanuts (shelled) (half cup; roughly chopped)
  • 45 g raw almonds (quarter cup; roughly chopped)
  • 33 g chia seeds (3 large baking tablespoons)
  • 31 g sesame seeds (3 large baking tablespoons)
  • 180 g pure honey (natural bee honey; can substitute agave syrup or other liquid sweetener)
  • 90 g coconut oil (will melt from residual pan heat)

    Roughly chop the almonds and peanuts. Roughly chop the dates as well. Set everything aside.
    Tip: A food processor works well for a quick pulse — but by hand gives more control over size.

    Heat a large heavy-bottomed pan (preferably one with a heat-diffusing base) over low heat. Add the oats and toast, stirring constantly, for about 4 minutes until they begin to turn lightly golden and fragrant.
    Tip: Never stop stirring — anything in contact with the hot metal can burn and ruin the batch.

    Add the chopped almonds to the pan and continue stirring for 2–3 more minutes.

    Add the chopped peanuts and continue stirring as they start to pick up colour.

    Add the desiccated coconut. Stir continuously — it will start to release its aroma and lightly brown.
    Tip: Use coarse-cut coconut; it releases its natural oils better than fine-cut.

    Add the raisins and chopped dates. Stir carefully — raisins and dates are very sweet and will caramelize and burn quickly if added too early.
    Tip: Add these last among the dry ingredients for this reason.

    Add the sesame seeds and chia seeds. Continue stirring until the sesame starts to pop and releases its oils. Total dry-toasting time is approximately 18 minutes.
    Tip: The sesame popping is the signal that it is releasing its natural oils into the mixture.

    Turn off the heat. Immediately add the honey and coconut oil to the hot pan. Mix vigorously and quickly so the honey and melted coconut oil coat every ingredient evenly. Work for about 7–8 minutes until the mixture is fully homogeneous.
    Tip: The residual heat of a heavy-bottomed pan is enough to melt the coconut oil. Act fast — the mixture will look wet at first but the oats and nuts will absorb the liquids as it cools.

    Line a rectangular mould or baking tray with baking paper. Pour the mixture in and press it down gently at first, then increasingly firmly — use a flat-bottomed glass or the base of a bottle if you do not have a press. Aim for a uniform thickness throughout.
    Tip: Compact it very firmly — it will only hold together once chilled.

    Leave to cool and set at room temperature for 3–4 hours (or refrigerate to speed up). Once firm, unmould, peel off the paper, and cut into individual bars.
    Tip: The coconut oil acts as a natural lubricant making them easy to unmould. Store wrapped individually at room temperature for up to 2 weeks — no refrigeration needed.
