Ingredients

  • 22 ml lemon juice (freshly squeezed)
  • 22 ml simple syrup
  • 60 ml blended Scotch whisky
  • 22 ml aquafaba (chickpea liquid or reconstituted aquafaba powder)
  • rinse absinthe (to coat the inside of the glass)
  • 90 ml soda water (to top)
  • 1 piece lemon twist (for garnish) optional

    Rinse a 9oz highball glass with absinthe using an atomizer, coating the entire interior evenly. Set aside.
    Tip: Use a lower-volume (~9oz) highball glass to avoid over-diluting the cocktail when topping with soda water.

    Add lemon juice, simple syrup, blended Scotch, and aquafaba to a cocktail shaker without ice.

    Dry shake vigorously without ice to emulsify the aquafaba and build foam.

    Tip: Make sure everything is very cold — fizzes are served without ice in the glass, so temperature is key.
