Negroni Svegliato
The 'wake-up Negroni' — a hot-coffee-infused twist on the classic, built by brewing sweet vermouth through a Bialetti moka pot with espresso grounds, then stirring with Campari and gin. Created by legendary bartender Salvatore Calabrese (the Maestro) for the Bar Bound at the Cromwell, Las Vegas.

Ingredients
- 30 ml sweet vermouth (to be coffee-brewed via Bialetti)
- to fill Bialetti basket espresso-ground coffee (loosely packed, do not tamp)
- 30 ml Campari
- 30 ml gin
- for garnish orange twist
Steps
-
1Fill a Bialetti moka pot's bottom chamber with sweet vermouth up to the pressure-release fill line.Tip: Do not exceed the fill line — that's the safety valve.
-
2Fill the basket with espresso-ground coffee. Keep it loose — packing too tightly will block flow.
-
3Assemble the Bialetti and place on the stovetop. Brew until vermouth has filtered through the coffee.Tip: Alcohol vapor may briefly catch fire near the spout — this is normal.~5 min
-
4Cool the coffee-brewed vermouth slightly so it doesn't melt the ice on contact.
-
5In a mixing glass, combine 30 ml Campari, 30 ml gin, and 30 ml of the coffee-brewed sweet vermouth.
-
6Add a large piece of ice and stir until chilled and properly diluted.~1 min
-
7Strain over fresh ice in a rocks glass and garnish with an orange twist (or freeze-dried orange wheel).

Cultural Context
Created by Salvatore Calabrese — the bartender known as 'the Maestro' — for the Bar Bound at the Cromwell hotel in Las Vegas, the Negroni Svegliato ('wake-up Negroni') is a play on the Negroni Sbagliato ('messed-up Negroni'). It uses a Bialetti moka pot to brew sweet vermouth through espresso grounds, marrying Italian aperitivo culture with espresso tradition. Some alcohol burns off during brewing, but the Campari and gin keep the drink potent.
