Ingredients

Apple Purée
  • 4 piece Granny Smith apples (chunked, roasted with wine and cinnamon)
Olive Rice
  • 400 g Day-old rice + Chinese sausage + black olives (sauté sausage, add sofrito, olives late, rice with stock)
Potato-Grape Salad
  • 1 batch Waxy potatoes + red grapes + gorgonzola (potatoes boiled and cubed, grapes halved)
Venezuelan Chicken Salad
  • 400 g Cooked chicken breast + vegetables + condensed milk (shredded, mixed with peas, carrots, apple, mayo)

    Roast apple chunks with wine, cinnamon, sugar, salt, and butter at 180°C for 45-60 min. Cool, blend with basil and extra butter.
    Tip: Double foil with chimney holes prevents burning while letting alcohol escape.

    Potato salad: combine boiled potato cubes, halved grapes, eggs, piquillo peppers, mayo, and crumbled gorgonzola.
