4 Pisco Cocktails for Peruvian Independence Day
Giacomo Bocchio and pisco expert Santiago Barco teach how to properly prepare four emblematic Peruvian pisco cocktails: Pisco Puro (neat), Pisco Sour, Capitán, and Chilcano, with tips on technique, ice quality, and cultural history.
Ingredients
Capitán
- 2 unit Pisco Acholado (oz)
- 2 unit Red vermouth (oz)
- 1 piece Orange peel (expressed over drink)
Chilcano
- 2 unit Pisco (oz)
- 4 unit Ginger ale (oz, very cold)
Pisco Puro
- 2 unit Pisco Mosto Verde (oz, served neat in copita)
Pisco Sour
- 3 unit Pisco Quebranta (oz, for Pisco Sour)
- 1 unit Gum syrup (oz)
- 1 unit Peruvian key lime juice (oz, freshly squeezed)
- 1 unit Egg white
- 3 unit Angostura bitters (drops)
Steps
-
1PISCO PURO: Pour Mosto Verde pisco into a traditional copita. Drink cold water first to lower mouth temperature, then sip.Tip: Mosto Verde is the jewel of pisco — fermentation stopped early yields smoother spirit.~2 min
-
2PISCO SOUR: Add 3 oz pisco Quebranta, 1 oz gum syrup, 1 oz lime juice, and 1 egg white to shaker. Dry shake first, then add ice and shake again. Strain and top with Angostura bitters.Tip: Egg white adds body and foam. Bitters mask any egg aroma.~3 min
-
3CAPITÁN: Pre-chill glass. In mixing glass with ice, add 2 oz Acholado pisco, 2 oz red vermouth, and bitters. Stir 20 seconds. Strain. Express orange peel over drink.Tip: Equal parts = Capitán. 2:1 pisco:vermouth = Comandante.~2 min
-
4CHILCANO: Fill tall glass with ice. Pour 2 oz pisco. Top with very cold ginger ale down the side. Garnish with lime slice.Tip: Ginger ale must be very cold to preserve carbonation.~2 min

Cultural Context
Pisco is Peru's flagship spirit, a single-distillation aguardiente made from fermented grape must without added water. It takes 12-26 kg of grapes to produce a single 750ml bottle. The Pisco Sour is Peru's national cocktail. The Capitán dates back to the 1920s — Peru's answer to the Manhattan. The Chilcano is a refreshing highball with ancient roots.
