Ingredients

  • 300 g chicken breast (sliced)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp cumin
  • 0.5 tsp chili powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 squeeze lime juice
  • 1 whole onion (chopped)
  • 1 whole bell pepper (chopped)
  • 100 g black beans (canned, drained)
  • 100 g white rice (uncooked, washed)
  • 400 g canned chopped tomatoes
  • 250 ml water
  • 1 handful coriander (fresh, chopped) optional
  • 2 stalks green onion (sliced) optional

    Season chicken breast with garlic powder, paprika, oregano, cumin, chili powder, salt, pepper, and lime juice. Mix until color changes.
    Tip: If the color doesn't change, the chicken isn't well seasoned.

    Cook the chicken on medium heat for 3 minutes, then add chopped onions and bell pepper and black beans.

    Add washed uncooked rice, season again, and toast the rice for 1-2 minutes before adding canned chopped tomatoes and water.
    Tip: Toasting the rice adds depth of flavor.
