  • 1 whole bell peppers (sliced)
  • 0.5 whole onion (sliced)
  • 150 g Mexican rice (cooked)
  • 50 g shredded lettuce (shredded)
  • 50 g sweet corn
  • 80 g black beans (canned, drained)
  • 30 g light sour cream optional
chicken
  • 200 g chicken breast (sliced)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp cumin
  • 0.5 tsp red chili flakes
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 squeeze lime juice
green sauce
  • 0.5 whole avocado
  • 100 g low-fat yogurt
  • 1 handful coriander (fresh)

    Season chicken with garlic powder, paprika, oregano, cumin, red chili flakes, salt, pepper and a squeeze of lime juice. Mix until the color changes.
    Tip: If the color doesn't change, the chicken isn't well seasoned yet.

    Make the green sauce: blend half an avocado, low-fat yogurt, coriander, garlic powder, salt, pepper, and lime juice until smooth and creamy.

    Cook the chicken on high heat for 4 minutes on each side until golden. Set aside.

    In the same pan, cook the sliced bell peppers and onion for 5 minutes until soft.
