High Protein Chicken Fajita Bowl

- 60 g sweet corn

- 500 g chicken breast (diced)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 1 tsp paprika
- 0.5 tsp chili powder
- 0.5 tsp salt
- 1 tbsp lime juice
green-sauce
- 1 whole avocado
- 80 g low-fat yogurt
- 2 tbsp fresh parsley
- 1 clove garlic
rice
- 300 g rice (cooked)
- 2 tbsp fresh coriander (chopped)
veg
- 1 whole onion (sliced)
- 1 whole bell pepper (sliced)
Steps

1Cube chicken breast, then add garlic powder, onion powder, cumin, paprika, chili powder, salt, pepper, and a squeeze of lime juice. Mix until the color changes.Tip: If the color doesn't change, it's not well seasoned.~5 min

2For the green sauce, blend avocado, low-fat yogurt, fresh parsley, garlic, lime juice, salt, and water until completely smooth and creamy.~3 min

3Cook rice with salt. Once cooked, add fresh coriander and lime juice, mixing well.~20 min

4Get a pan on medium heat and cook the chicken for 8 minutes until golden brown. Set aside.~8 min

5In the same pan, add onions and bell pepper with the same seasoning used earlier. Cook until done.~5 min
