  • 300 g chicken breast (cubed)
  • 150 g rice (dry, cooked)
  • 1 handful fresh coriander (chopped)
  • 1 whole onion (sliced)
  • 1 whole bell pepper (sliced)
  • 100 g black beans (canned, drained)
  • 80 g sweet corn
fajita seasoning
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp cumin
  • 1 tsp paprika
  • 0.5 tsp chili powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 squeeze lime juice (freshly squeezed)
green sauce
  • 1 whole avocado
  • 100 g low-fat yogurt
  • 1 handful fresh parsley
  • 1 clove garlic

    Cube the chicken breast then season with garlic powder, onion powder, cumin, paprika, chili powder, salt, pepper, and a squeeze of lime juice. Mix well until the color changes.
    Tip: If the color doesn't change, it's not well seasoned.

    Blend avocado, low-fat yogurt, fresh parsley, garlic, lime juice, salt, and a splash of water until completely smooth and creamy to make the green sauce.

    Cook the rice in a pot with salt. Once cooked, add fresh coriander and lime juice and mix well.

    Get a pan on medium heat and cook the chicken for 4 minutes on each side until golden brown, then set aside.

    In the same pan, add onions and bell pepper with the same seasoning used earlier and cook until soft.
