Mango Habanero Chicken
A vibrant low-calorie mango habanero chicken featuring cubed chicken breast in a sweet, tangy and spicy mango habanero glaze. The chicken is seasoned with cumin, paprika and lime before being pan-seared and coated in a bubbling mango juice, honey and habanero sauce. Garnished with fresh mango and coriander.
Ingredients

- 300 g chicken breast (cubed)
- 1 tsp garlic powder
- 0.5 tsp onion powder
- 0.5 tsp oregano
- 1 tsp paprika
- 0.5 tsp cumin
- 0.5 tsp chili flakes
- 1 tbsp lime juice
garnish
- 50 g fresh mango (diced)
- 1 tbsp fresh coriander (chopped)
sauce
- 1 tsp light butter
- 2 cloves fresh garlic (minced)
- 100 ml mango juice
- 1 tbsp honey
- 1 tbsp habanero hot sauce
Steps

1Cube chicken breast and season with garlic powder, onion powder, oregano, paprika, cumin, chili flakes, salt and lime juice. Mix until the color changes.~5 min

2Cook the chicken on medium heat for 8 minutes until golden brown. Set aside.~8 min

3Add light butter and fresh garlic to the pan. Cook for a minute, then add mango juice, honey, habanero hot sauce, paprika and lime juice. Mix well and bring to a light bubble.~3 min

4Add the cooked chicken back in and simmer. Garnish with fresh coriander and mango pieces, then serve.~2 min
