Creamy Lemon Garlic Shrimp Linguine
A delicious high-protein creamy lemon garlic shrimp linguine at only 490 calories per serving, perfect for meal prep. Shrimp is marinated in garlic, Italian herbs and lemon, pan-cooked until golden, then tossed with a creamy light sauce made from low-fat milk, cream cheese and parmesan over linguine pasta with fresh spinach. Ingredients

- 300 g linguine (cooked)
- 60 g fresh spinach
sauce
- 150 ml low-fat milk
- 60 g light cream cheese
- 30 g parmesan cheese (grated)
- 50 ml pasta water
shrimp
- 400 g shrimp (peeled and deveined)
- 3 cloves fresh garlic (minced)
- 1 tsp Italian herbs
- 0.5 tsp chili flakes
- 0.5 tsp smoked paprika
- 0.5 tsp salt
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 1 tbsp light butter
- 1 handful fresh parsley (chopped)
Steps

1Season shrimp with fresh garlic, Italian herbs, chili flakes, smoked paprika, salt, lemon juice and olive oil. Mix well until the color changes.Tip: If the color doesn't change it's not well seasoned.~5 min

2Cook shrimp on medium heat for 6 minutes until golden and juicy. Lower the heat, add light butter, fresh parsley and lemon juice. Mix and set the shrimp aside.~8 min

3To the same pan add low-fat milk, light cream cheese, parmesan, more seasoning and pasta water. Mix until the sauce thickens.~5 min

4Add the cooked linguine, a handful of spinach, the shrimp back in, more parsley, lemon juice and parmesan. Mix everything together.~3 min
