For the chicken
- 1 kg Boneless chicken thighs (cubed)
- 3 tbsp Fajita seasoning mix
- 1 tbsp Olive oil
- 1 tbsp Lime juice
For the sheet pan
- 3 piece Mixed bell peppers (chopped)
- 1 piece Onion (chopped)
- Cooking spray
For topping
- 100 g Low-fat cheddar cheese (shredded)
- 100 g Low-fat mozzarella cheese (shredded)
- 2 piece Fresh tomatoes (diced)
- Fresh coriander (cilantro) (chopped)
Steps

1In a bowl, toss cubed boneless chicken thighs with fajita seasoning, olive oil, and lime juice. Mix until the chicken changes color from the spices.~5 min

2On a large sheet pan, spread the chopped onions and mixed bell peppers. Add fajita seasoning and cooking spray. Toss until well combined.~3 min
