Ingredients
- 150 g unsalted butter (softened to room temperature)
- 200 g sugar (about 3/4 cup)

1Combine the 150 g of unsalted butter with the sugar and mix well to start dissolving the sugar into the butter.

2Microwave the butter and sugar in 20-30 second bursts, creaming and mixing between each burst. Repeat three or four times until the sugar is fully dissolved.Tip: Let the butter-sugar mixture cool to room temperature before combining with the eggs, otherwise it will cook the eggs.

3In a separate bowl, add the 2 eggs and beat them.

4Add the cocoa powder, salt, baking powder, and vanilla extract to the beaten eggs.

5Pour in the concentrated coffee and mix well to integrate all the ingredients. The coffee intensifies the chocolate flavor.

6Add the cooled butter-sugar mixture (at room temperature) and mix well.

7Chop the bittersweet chocolate into small pieces and stir it into the batter.

8Add the 90 g of flour and mix until just combined.

9Line a baking pan with parchment paper, pour in the batter, and tap the pan gently a few times so it settles evenly and compactly.
