Ingredients

Cantina Highball
  • 45 ml clarified spiced margarita cordial
  • 45 ml tequila blanco
  • to top grapefruit soda (Squirt, Jarritos, or fresh pink grapefruit soda)
Clarified Spiced Margarita Cordial
  • 240 ml lime juice (freshly squeezed)
  • 120 ml cinnamon syrup
  • 120 ml orange liqueur (Cointreau, triple sec, or curaçao)
  • 180 ml whole milk (at room temperature (use at least 1/4 of total volume; coconut cream for vegan))
Post Modern Margarita
  • 60 ml clarified spiced margarita cordial
  • 45 ml tequila blanco
  • 1 whole lime wheel (fresh or freeze-dried, for garnish) optional

Cantina Highball

    For the Cantina Highball, pour 1-1/2oz (45ml) clarified cordial and 1-1/2oz (45ml) tequila blanco into a highball glass, then add ice and top with grapefruit soda.
    Tip: Densities are close enough that it mixes without layering. Pour off the ice if you prefer.

Clarified Spiced Margarita Cordial

    Combine 1 cup (240ml) lime juice, 1/2 cup (120ml) cinnamon syrup, and 1/2 cup (120ml) orange liqueur in a vessel and stir to mix. This makes roughly 2 cups of liquid to be clarified.
    Tip: Use curaçao instead of triple sec for a deeper flavor that stands up to clarification a bit better.

    Pour the lime mixture slowly INTO the room-temperature milk (not the milk into the mixture). Use at least 1/4 of the total volume in milk; about 3/4 cup (180ml) works well. Pouring this direction lets the curds form gradually for bigger curds and better filtration.
    Tip: Cold milk inhibits curdling, so let the milk come to room temperature first. Do not heat it.

    Set the mixture aside and let it curdle. It can be filtered within 30 minutes, but leave it at least 8 hours (overnight or up to 24 hours is best) for better separation and clarification.

    Pre-wet a coffee/cloth filter, then pour the curdled mixture through it. It will run cloudy at first; let it run until a raft of curds forms in the filter and it begins to drip clear. Then swap in a clean container and pour the cloudy collected liquid back through to finish clear.
    Tip: Set it aside and leave it alone; filtration takes a few hours. If it stops dripping, give the curds a gentle stir or change the filter. Don't rush it or you'll break the raft.

    Store the finished clarified cordial in the fridge. Unlike a fully clarified cocktail, the syrup is not shelf stable; it keeps about 3 weeks to a month refrigerated.

Post Modern Margarita

    Pour 2oz (60ml) clarified cordial and 1-1/2oz (45ml) tequila blanco over cracked ice in a mixing glass. Stir to chill and dilute, since no dilution was added to the cordial.
