One Pot Cajun Chicken and Rice
A simple, delicious one-pot meal featuring Cajun-spiced chicken breast cooked with bell pepper, chili, and rice simmered together until perfectly fluffy. Ingredients
- 400 g chicken breast (halved)
- 2 tsp cajun seasoning
- 1 tbsp olive oil
- 1 medium onion (sliced)
- 1 medium bell pepper (sliced)
- 1 whole red chili pepper (sliced) optional
- 150 g white rice (uncooked)
- 350 ml water
- salt

1Cut chicken breasts in half. Season with cajun seasoning on one side, drizzle with olive oil and rub until evenly coated.

2Place chicken on a high heat pan. Season the other side. Cook for 5 minutes until charred, then flip.Tip: A nice char adds great flavor.~5 min

4Add a cup of uncooked rice and two cups of water. Season again.
