One Pot Cajun Chicken and Rice

Ingredients

  • 400 g chicken breast (halved)
  • 2 tsp cajun seasoning
  • 1 tbsp olive oil
  • 1 medium onion (sliced)
  • 1 medium bell pepper (sliced)
  • 1 whole red chili pepper (sliced) optional
  • 150 g white rice (uncooked)
  • 350 ml water
  • salt

    Cut chicken breasts in half. Season with cajun seasoning on one side, drizzle with olive oil and rub until evenly coated.

    Place chicken on a high heat pan. Season the other side. Cook for 5 minutes until charred, then flip.
    Tip: A nice char adds great flavor.

    Lower the heat and add onions, bell pepper, and red chili pepper.

    Add a cup of uncooked rice and two cups of water. Season again.

    Cover and let simmer for 12 minutes. About halfway through, check and mix the rice.
