  • 1 whole bell pepper (diced)
  • 2 cloves garlic (minced)
  • 1 whole tomato (chopped)
  • 1 tsp paprika
  • 1 tsp Italian herbs
  • fresh basil optional
  • 2 tbsp low-fat cream cheese

    Add salt to boiling water and cook 1 cup of pasta for 10 minutes. Reserve half a cup of pasta water, then drain the rest.

    Heat olive oil in a pan. Add bell pepper, garlic cloves, and chopped tomato. Season with salt, pepper, paprika, and Italian herbs. Cook until soft.

    Transfer the cooked vegetables to a blender with the reserved pasta water, fresh basil, and low-fat cream cheese. Blend for a few minutes until smooth.
