Ingredients

  • 400 g chicken breast (halved)
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 0.5 tsp red chili flakes optional

  • 1 tbsp olive oil
pasta
  • 3 cloves garlic (chopped)
  • 0.5 whole onion (chopped)
  • 1 tbsp tomato paste
  • 100 g cherry tomatoes (halved)
  • 40 g sun-dried tomatoes
  • 1 handful fresh spinach
  • 150 g pasta (cooked)
sauce
  • 150 ml low-fat milk
  • 60 g light cream cheese
  • 30 g parmesan (grated)
  • 1 tsp Italian herbs
  • 0.5 cup pasta water (reserved from cooking)

    Slice chicken breast into halves. Season with garlic powder, onion powder, smoked paprika, oregano, red chili flakes, salt, and olive oil. Mix well.

    For the sauce, blend low-fat milk, light cream cheese, grated parmesan, Italian herbs, and pasta water until smooth.

    Cook the chicken in a pan on medium heat for 4 minutes on each side until golden brown. Set aside.

    In the same pan, add chopped garlic and onion and cook until fragrant. Add tomato paste, cherry tomatoes, and sun-dried tomatoes.
