- 3 tbsp low-fat yogurt
- 0.5 lemon lemon juice (squeezed)

- 1 whole onion (chopped)
- 1 whole bell pepper (diced)
- 1 whole carrot (diced)
- 1 cup white rice (uncooked)
- 2 cups water
serving
- 3 tbsp yogurt mint sauce
