Crispy Garlic Chicken Fried Rice
A high-protein crispy garlic chicken fried rice packed with flavor, perfect for meal prep. The chicken thighs are seasoned and pan-fried until golden, served over egg fried rice with a spicy garlic yum yum sauce. Comes in at 590 calories per serving.
Ingredients

- 300 g chicken thighs (sliced into cubes)
- 1 tsp black pepper
- 0.5 tsp chili flakes
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tbsp soy sauce
- 1 tbsp olive oil
rice
- 1 tbsp light butter
- 1 medium onion (chopped)
- 3 stalks green onions (chopped)
- 1 medium carrots (diced)
- 2 whole eggs
- 200 g cooked rice (day-old)
- 1 tbsp oyster sauce
- 1 handful fresh parsley (chopped)
sauce
- 2 tbsp light mayonnaise
- 1 tbsp ketchup
- 1 tbsp sriracha
- 2 cloves minced garlic (minced)
- 0.5 tsp ginger powder
- 1 tsp rice vinegar
Steps

1Slice chicken thighs into cubes and season with black pepper, chili flakes, garlic powder, onion powder, soy sauce and olive oil. Mix until the color changes.~5 min

2Make the spicy yum yum sauce by combining light mayo, ketchup, sriracha, minced garlic, ginger powder, rice vinegar and a dash of milk. Mix to your desired consistency.~2 min

3Cook the chicken in light butter for 5 minutes each side until golden brown and crispy. Add fresh parsley, mix well and set aside.~10 min

4In the same pan, add butter and chopped onions. Cook for 8 minutes until caramelized, then add green onions and carrots with extra seasoning. Mix well.~10 min

5Add eggs and keep stirring until scrambled, then add day-old cooked rice with more soy sauce, oyster sauce and green onions. Give it a final mix until fragrant.~5 min
