High Protein Crispy Chicken Fried Rice

A tasty high-protein crispy chicken fried rice with golden-brown seasoned chicken, scrambled eggs, mixed vegetables, and leftover cooked rice tossed in soy sauce, oyster sauce, and sesame oil. Easy to make and incredibly satisfying. Garnished with green onion for a fresh finish.

Ingredients

chicken
  • 400 g chicken breast (diced)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp black pepper
  • 1 tsp paprika
  • 2 tbsp soy sauce
  • 1 tbsp corn flour
garnish
  • 2 stalks green onion (chopped)
rice
  • 150 g mixed vegetables
  • 2 whole eggs
  • 300 g cooked rice (leftover/cold)
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil

Steps

    Season chicken with garlic powder, onion powder, black pepper, paprika, soy sauce, and corn flour. Mix well until each piece is well combined.

    Get a pan on high heat and cook the chicken for 2-3 minutes on each side until golden brown and crispy. Set aside.

    In the same pan, add mixed vegetables and cook for a minute before adding the eggs. Keep stirring until scrambled.

    Mix everything together, then add leftover cooked rice with soy sauce, oyster sauce, and sesame oil. Give it a good mix.
    Tip: Using day-old rice gives the best fried rice texture.
