High Protein Chicken Fried Rice (Meal Prep)

A classic high-protein chicken egg fried rice made with marinated chicken cubes, scrambled eggs, mixed vegetables, green onion, and leftover rice finished with soy sauce and sesame oil. A great weight-loss meal prep staple that's low in calories and full of protein.

Ingredients

  • 300 g chicken breast (cubed)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • black pepper
  • 3 tbsp soy sauce
  • 150 g mixed vegetables
  • 2 stalks green onion (chopped)
  • 2 whole eggs
  • 300 g cooked rice (leftover/day-old)
  • 1 tsp sesame oil

Steps

    Cut chicken into cubes. Marinate with olive oil, garlic powder, onion powder, black pepper, and soy sauce. Mix well.

    Get a pan on high heat. Cook the chicken for 4 minutes on each side until golden brown. Set aside.

    In the same pan, add mixed vegetables and green onion. Let it brown.

    Add eggs and keep stirring until scrambled, then mix it all together.

    Add leftover cooked rice and the chicken back in. Add more soy sauce and sesame oil.
