Creamy Chipotle Steak and Potatoes
A bold high-protein meal of cubed steak bites served with crispy roasted potatoes in a rich chipotle cream sauce, all at 530 calories. The steak is marinated with lime, cumin and smoked paprika, seared to perfection, then finished in a creamy parmesan chipotle sauce. Perfect for meal prep.
Ingredients

- 300 g potatoes (cubed)
- 1 tsp Italian herbs

- 1 tbsp light butter
- 3 cloves garlic (chopped)
- 1 medium onion (chopped)
- 1 tbsp chipotle paste
- 100 ml evaporated milk
- 50 g light cream cheese
- 20 g parmesan cheese (grated)

- 300 g steak (cubed)
- 0.5 tsp salt
- 1 tsp parsley (dried)
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 0.5 tsp cumin
- 1 tbsp lime juice
- 1 tbsp olive oil
Steps

1Slice steak into cubes and season with salt, parsley, garlic powder, smoked paprika, cumin, lime juice and olive oil. Mix until the color changes.~5 min

2Season potato cubes with salt, Italian herbs, garlic, paprika and optional olive oil. Oven bake or air fry for 20 minutes until golden and crispy.~20 min

3Cook steak bites for 2 minutes each side on medium-high heat. Lower the heat, add butter and parsley, mix until coated, then set aside.~5 min

4In the same pan add chopped garlic and onion. Cook for 5 minutes, add Italian herbs and chipotle paste and mix. Add evaporated milk, light cream cheese and parmesan. Mix until smooth.~8 min
