Ingredients

  • 1 oz tea-infused vodka (Earl Grey infused, chilled)
  • 0.5 oz white rum
  • 0.5 oz triple sec
  • 0.5 oz silver tequila
  • 1 oz fresh lemon juice (freshly squeezed)
  • 0.75 oz simple syrup (1:1) (chilled)
  • 1 oz soda water (to top, 1-2 oz)
  • for garnish lemon wheel opcional

Steps

  1. 1
Make the tea-infused vodka ahead: add a tea bag (Earl Grey, or an orange pekoe / bergamot tea) to 40% vodka, let it steep about 2 hours, squeeze out the bag, and chill in the fridge.
Tip: A dark, flavorful tea like Earl Grey gives the best color and aroma.

  2. 2
Cut a lemon, reserving a wheel for garnish, and squeeze 1 oz (30 ml) of fresh lemon juice into a shaker tin.
  3. 3
Add all the remaining ingredients except the soda water to the shaker: simple syrup, white rum, triple sec, silver tequila, and tea-infused vodka.
Tip: You don't have to shake this cocktail, but shaking fully incorporates everything.
  4. 4
Shake with ice for 8 to 10 seconds.
  5. 5
Strain into a tall highball glass (about 11 oz / 330 ml) filled with fresh ice, leaving room at the top.
  6. 6
Top with 1 to 2 oz (30 to 60 ml) of soda water and give it a gentle stir to incorporate.
  7. 7
Garnish with a lemon wheel and serve.

Cultural Context
The London Iced Tea is a modern riff on the Long Island Iced Tea, one of the most famously boozy cocktails. Where the Long Island uses cola for its characteristic 'tea' look, this version achieves an authentic amber color and aroma by infusing vodka with Earl Grey tea (steeping a tea bag in 40% vodka for about two hours, then chilling). The result is a more sophisticated, lightly tea-scented drink rather than a sugary cola-based one.
