  • 2 tsp Olive Oil
  • 1 whole Lime (juiced)
  • 20 g Light Butter (for cooking)
Fajita Mac n Cheese
  • 0.5 whole White Onion (finely chopped)
  • 0.5 whole Red Onion (finely chopped)
  • 0.5 whole Red Bell Pepper (finely chopped)
  • 0.5 whole Green Bell Pepper (finely chopped)
  • 280 ml Milk
  • 150 g Light Cream Cheese
  • 35 g Light Cheddar (grated)
  • 35 g Mozzarella
  • 240 g Macaroni (uncooked)
  • 0.5 whole Lime (juiced)
Fajita Seasoning Mix
  • 1 tsp Salt
  • 1 tsp Oregano
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Paprika
  • 1 tsp Chilli Powder
  • 1 tsp Cumin

Steps

Chicken Marinade

  1. 1
In a bowl, combine the cubed chicken breast with 1.5 batches of the fajita seasoning mix, olive oil, and the juice of 1 lime. Mix until fully coated.
Tip: Mix until you lose patience — the longer it marinates the better, but even a quick coat works well.
    ~5 min
  2. 2
Cook the marinated chicken in light butter over medium-high heat for 6 to 8 minutes until golden brown. Set the cooked chicken aside.
Tip: Avoid overcrowding the pan so the chicken browns rather than steams.
    ~8 min

Fajita Mac n Cheese

  1. 1
Cook the macaroni according to package instructions until al dente. Drain and set aside.
    ~10 min
  2. 2
In the same pan, add the chopped white onion, red onion, red bell pepper, and green bell pepper. Sprinkle with additional fajita seasoning and cook over medium heat until softened.
Tip: Using the same pan keeps all the flavour from the chicken in the dish.
    ~5 min
  3. 3
Add the milk, light cream cheese, grated cheddar, and mozzarella to the pan with the vegetables. Stir continuously over medium heat until the sauce is creamy and fully melted.
Tip: Keep stirring to prevent the cheese from sticking to the bottom of the pan.
    ~4 min
  4. 4
Add the cooked macaroni to the cheesy sauce and stir to combine. Then add the cooked chicken and fold it in gently.
    ~2 min
  5. 5
Squeeze in half a lime juice, give the dish a final stir, and serve immediately.
Tip: The lime juice at the end brightens all the flavours — don't skip it.
    ~1 min

Fajita Seasoning Mix

  1. 1
Combine all Fajita Seasoning Mix ingredients — salt, oregano, garlic powder, onion powder, paprika, chilli powder, and cumin — and mix well. This makes 1 batch of seasoning.
Tip: Make extra batches and store in an airtight jar for future use.
    ~2 min
