High Protein Korean Fried Chicken Burger
A delicious high-protein Korean fried chicken burger with 47g of protein, featuring crispy cornflake-coated chicken glazed in a gochujang-honey sauce, served on a toasted brioche bun with homemade coleslaw, pickled cucumbers, and spicy mayo.
Ingredients

- 60 g crushed corn flakes (crushed)
- 1 whole egg wash (beaten)
- 1 spray cooking spray
burger
- 2 whole brioche bun (toasted)
- 2 tbsp spicy mayo
chicken
- 400 g chicken breast (sliced into halves)
- 1 tsp paprika
- 1 tsp garlic powder
- 0.5 tsp chili powder
- 0.5 tsp salt
glaze
- 2 tbsp light soy sauce
- 1 tbsp rice vinegar
- 1 tbsp gochujang
- 1 tbsp honey
pickled-cucumber
- 0.5 whole cucumber (sliced)
- 1 tbsp soy sauce
- 1 tsp sesame seeds
slaw
- 100 g red cabbage (shredded)
- 1 medium carrot (grated)
- 2 tbsp light mayo
Steps

1Slice chicken into halves, then season with paprika, garlic, chili powder, and salt.~5 min

2On a plate add crushed corn flakes with seasoning. Dip chicken in egg wash then into the crumbs. Make sure everything is well coated.~5 min

3Add cooking spray then oven or air-fry for 20 minutes.~20 min

4Meanwhile make the slaw with red cabbage, carrot, light mayo, salt and pepper.~3 min

5In a separate bowl, add sliced cucumber with soy sauce, chili flakes, garlic, and sesame seeds to make pickled cucumbers.~3 min

6For the glaze, combine light soy sauce, rice vinegar, gochujang, and honey. Stir and simmer on low heat until thick.~5 min

7Once the chicken is done, coat with the glaze. Grab a toasted brioche bun and add the slaw, pickled cucumbers, crispy chicken, sesame seeds, and spicy mayo.
