Ingredients

chicken
  • 500 g chicken breast (cubed)
  • 2 tbsp butter chicken spice mix
  • 1 tbsp lemon juice
  • 100 g fat-free yogurt
garnish
  • 1 handful fresh coriander (chopped)
pasta
  • 300 g pasta (cooked)
sauce
  • 1 tbsp light butter
  • 1 medium onion (sliced)
  • 400 g canned tomatoes
  • 30 g cashew nuts
  • 50 ml pasta water

    Cube chicken and season with the spice mix, lemon juice and fat-free yogurt. Mix until well coated.

    Add light butter to a pan with sliced onion. Cook for 5 minutes, then add canned tomatoes, the same spices, cashew nuts and fat-free yogurt. Mix well.

    Transfer the sauce mixture to a blender with pasta water and blend until completely smooth.

    Cook the chicken in the pan for 8 minutes until golden brown, then add the blended sauce and cooked pasta. Mix well.
