Ingredients

  • 600 g chicken breast (cut into cubes)

  • 1 tsp cumin
  • 1 tsp paprika

  • 1 tbsp lime juice
green sauce
  • 1 whole avocado
  • 100 g low-fat yogurt
  • 15 g fresh coriander
  • 0.5 tsp garlic powder
  • 1 tbsp lime juice
rice
  • 200 g basmati rice (uncooked)
  • 2 tbsp tomato paste
toppings
  • 60 g shredded lettuce
  • 80 g sweet corn
  • 80 g black beans (canned, drained)
  • 1 whole lime (cut into wedges) optional

  • 200 g mixed vegetables (bell peppers, onion — chopped)

    Cut chicken into cubes. Season with oregano, cumin, paprika, garlic powder, chili flakes, salt, pepper, and lime juice. Mix until the color changes.

    For the green sauce, blend avocado, low-fat yogurt, fresh coriander, garlic powder, salt, pepper, and lime juice until completely smooth and creamy.

    Cook the chicken on medium heat for 3 minutes on each side until golden brown. Set aside.
