High Protein Chicken Fajita with Green Sauce
A high-protein chicken fajita made with seasoned chicken breast, sauteed onions and bell peppers over rice. The blended green sauce of fat-free yogurt, light mayo, and coriander adds a creamy, herby finish. A satisfying and flavorful alternative to plain chicken and rice.

- 1 tsp dried oregano
- 1 tsp garlic powder
- 1 tsp paprika
- 0.5 tsp cumin
- 0.5 tsp salt
- 0.5 tsp black pepper
- 1 tbsp olive oil
green sauce
- 60 g fat-free yogurt
- 1 tbsp light mayo
- 20 g fresh coriander
- 2 cloves garlic cloves
- 1 tbsp lemon juice
rice
- 50 g onion (sliced)
- 80 g bell peppers (sliced)
- 80 g uncooked rice (washed)
- 160 ml water

1Slice chicken breast into strips. Season with oregano, garlic powder, paprika, cumin, salt, pepper, and olive oil. Mix until the color changes.Tip: The color must change to confirm it is well seasoned.~3 min

2Blend fat-free yogurt, light mayo, fresh coriander, garlic cloves, salt, pepper, and lemon juice until creamy. Set aside.~2 min

3Cook the chicken in a hot pan for 3 minutes on each side until golden brown. Set aside.~6 min

4In the same pan, add sliced onion and bell peppers, then add washed uncooked rice. Season again and toast the rice.~3 min

5Add water, bring to a light bubble, cover and simmer for 8 minutes until fully cooked.~8 min
