  • 1.5 tsp salt
  • 1.5 tsp oregano
  • 1.5 tsp garlic powder
  • 1.5 tsp smoked paprika
  • 1.5 tsp cumin
  • 70 g chipotle paste
  • 50 g honey
  • 0.75 lime lime juice (juiced)
chipotle sauce
  • 100 g low fat yogurt
  • 50 g light mayo
  • 25 g chipotle paste
  • 50 g pineapple chunks (fresh preferred)
  • 1 squeeze lime juice
cilantro lime rice
  • 20 g light butter
  • 100 g white onion (chopped)
  • 280 g basmati rice (raw, cooked separately)
  • fresh coriander (chopped)
  • 1 whole lime lime juice (juiced)

Steps

    Season chicken thighs with salt, oregano, garlic powder, smoked paprika, cumin, chipotle paste, honey, and lime juice. Mix until the color changes.

    On medium heat, add butter and chopped onions. Cook for 5 minutes until soft. Add extra seasoning and mix before adding the cooked rice. Mix to a golden yellow, then add coriander and lime juice.

    Lay the marinated chicken thighs on a sheet pan. Oven bake or air fry for 20 minutes at 200C/400F until golden and juicy. Optionally broil for 2-3 minutes for a charred top.
