Creamy Garlic Cheesy Chicken and Potatoes
A high-protein one-pan meal featuring juicy garlic chicken and crispy roasted potatoes smothered in a light cream cheese, parmesan and mozzarella sauce, all at just 500 calories. Both the chicken and potatoes share the same spice blend, and the dish is finished with melted mozzarella for an extra cheesy touch. Makes four meal-prep servings.
Ingredients

- 500 g chicken breast (cubed)
potatoes
- 400 g potatoes (sliced)
sauce
- 100 ml low-fat milk
- 60 g light cream cheese
- 20 g parmesan cheese (grated)
seasoning
- 3 cloves fresh garlic (minced)
- 1 tsp onion powder
- 1 tsp mixed herbs
- 0.5 tsp chili flakes
- 1 tsp paprika
- 0.5 tsp salt
- 1 tbsp olive oil
topping
- 40 g shredded mozzarella (shredded)
Steps

1Cube the chicken and season with fresh garlic, onion powder, mixed herbs, chili flakes, paprika, salt and olive oil. Mix until the color changes.~5 min

2Slice potatoes and season with salt, garlic, mixed herbs, chili flakes, paprika and olive oil. Mix well, then oven bake or air fry until crispy.~25 min

3Cook the chicken on high heat for 5 minutes, then lower the heat and add milk, light cream cheese, parmesan and extra seasoning.~8 min

4Add the crispy potatoes to the pan, top with shredded mozzarella, cover for a few minutes to let the cheese melt.~3 min
