  • 400 g leftover cooked rice (cold)
  • 150 g mixed vegetables (frozen or fresh)
  • 2 large eggs
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
stir-fry
  • 1 medium onion (sliced)
  • 1 large bell pepper (sliced)
  • 100 g pineapple chunks
sweet and sour sauce
  • 3 cloves garlic (minced)
  • 1 tsp ginger (grated)
  • 100 ml pineapple juice
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 2 tbsp tomato sauce
  • 1 tsp cornstarch (mixed with water)

    Season chicken with salt, pepper, smoked paprika, garlic powder, corn flour, and baking powder. Mix well until coated.

    Get a pan on medium heat, add mixed vegetables and cook for 1 minute. Add eggs and keep stirring until scrambled. Mix together, then add leftover rice with soy sauce, oyster sauce, and sesame oil. Give it a good mix and set aside.
    Tip: Use day-old cold rice for the best fried rice texture.

    Cook the chicken on high heat for 10 minutes until golden and crispy. Set aside.
