Easy Healthy Chicken and Rice Bowl

- 300 g chicken breast (cut in half)
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp oregano
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp salt
- 0.5 whole lemon (juiced)
rice
- 200 g basmati rice (uncooked)
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp cumin
- 400 ml water
serving
- shredded lettuce
- cherry tomatoes (halved)
- fat-free yogurt sauce
- sriracha optional
Steps

1Cut chicken breast in half. Marinate with olive oil, garlic, oregano, cumin, paprika, salt, and squeeze of half a lemon. Mix well.~5 min

2On medium heat, add uncooked rice seasoned with turmeric, paprika, and cumin. Lightly toast the rice, then add water and bring to a boil.~5 min

3Cover and simmer on low heat until the rice is fully cooked.~15 min

4Cook the chicken on high heat for 4 minutes on each side until golden brown.~8 min

5Plate the rice, shredded lettuce, cherry tomatoes, and chicken. Add a generous amount of yogurt sauce and sriracha. Enjoy.~2 min
