chicken
  • 300 g chicken breast (cut in half)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 whole lemon (juiced)
rice
  • 200 g basmati rice (uncooked)
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 tsp cumin
  • 400 ml water
serving
  • shredded lettuce
  • cherry tomatoes (halved)
  • fat-free yogurt sauce
  • sriracha optional

    Cut chicken breast in half. Marinate with olive oil, garlic, oregano, cumin, paprika, salt, and squeeze of half a lemon. Mix well.

    On medium heat, add uncooked rice seasoned with turmeric, paprika, and cumin. Lightly toast the rice, then add water and bring to a boil.

    Cover and simmer on low heat until the rice is fully cooked.
